Roasted Asparagus with Parmigiano Reggiano

Do you have a go to vegetable side dish that slays when you serve it?  I typically serve my balsamic glazed green beans, but I wanted to try something new recently and decided to serve up some roasted asparagus with parmigiano reggiano.  It….was…wonderful!  You get the roasted savory taste from the asparagus with the added blend of cheesy goodness.  I paired the roasted asparagus with my avocado tomato toast for a delicious lunch today.  So far I’ve been able to continue my good eating habits this past week…. with the exception of some pizza on Friday.  Good eating only gets you so far, so I’m still trying to get myself to the gym.  Unfortunately, it’s been raining for 6 days straight and the motivation to head to the gym was more than non-existent.  While doing my weekly grocery shopping, I tried a tasty roasted asparagus sample at Wegmans and had to recreate it with my own twist.

I truly could eat an entire plate of just asparagus and once you try this version, you may be saying the same thing soon enough!  For this recipe, I used about 18 asparagus stalks.  This translates to about 2-3 servings.  I’ve never been fond of leftover reheated asparagus, especially if it’s roasted, so use as much as needed for your meal.  This dish only takes 8-10 minutes to make so you can always make more if needed.  Be sure to check out the recipe below and save to your online recipe box.

Roasted Asparagus with Parmigiano Reggiano

Ingredients

  • asparagus
  • olive oil
  • shredded parmigiano reggiano
  • salt and pepper to taste
  • italian seasoning

Instructions

  1. Preheat oven to 425F
  2. Wash and dry the asparagus then trim the ends of each stalk
  3. drizzle olive oil and season with salt and pepper
  4. Top with a few dashes of italian seasoning
  5. Roast for 8-10 minutes until asparagus is visibly browning
  6. Remove from oven and top with shredded parmigiano reggiano
