I hate to say that one of my New Year’s resolutions is to eat healthier, but it really is. Resolutions has become one of those words that has lost its edge. I’m not sure that many people are even holding themselves accountable for unmet resolutions anymore….I know I’m not. I simply push the goal into the next year. Eating healthier and getting my body to a healthy size has been a resolution of mine for the past few years…..or decade. I had a dream that my future self told me that I needed to get healthy for my kids. That in order for me to see them all grown up, that my heart and body would have to be much more fit. It took that dream over any resolution for me to realize that I really need to accomplish this task in 2018.
Avocados have been super trendy in the food world lately and for good reason. They are packed of minerals, vitamins, healthy fats, and protein. They are also nutritionally dense and make you feel full when you eat them. So they make the perfect breakfast or lunch food. I made myself an avocado and tomato toast with egg, basil, and balsamic glaze for brunch today that was DELISH! I wanted to share this easy to make recipe as soon as possible! I really mean as soon as possible! I’m writing this blog post and eating my avocado toast right this very moment. It was agony taking pictures of this avocado toast and not biting into it in between shots.
