Rustic Tuscan Tomato and Egg Sandwich

Things got a bit too busy this week with the kiddos and unfortunately I didn’t get to use my avocados before they turned. Don’t you just hate having to toss out produce! It always reminds me of that one commercial of people tossing money right into the garbage. Let’s be real. Avocados are pretty expensive at $4.00 for 3. So having to toss them is like a punch in the gut. Instead of making the lunch I had planned to make, I whipped up a rustic tuscan tomato and egg sandwich.
Rustic Tuscan Tomato and Egg Sandwich
This tasty treat is as hearty as it is delicious. It’s super easy to make and took me as little as 5 minutes. Serve up your rustic tuscan tomato and egg sandwich with a cup of cappuccino for a true morning delight. What isn’t delightful is the waiting period between taking my photos and eating. As soon as I had snapped my pictures, I dove right into this plate. I don’t think I’ve ever ate so fast in my life! Probably not a pretty sight….nor classy. Luckily no one was around.

Ingredients
- 2 slices of tuscan bread
- 2 eggs
- 2 diced Roma tomato
- 2 tsp olive oil
- 3 tsp balsamic vinegar
- fresh grated cheddar cheese
- margarine
- salt and pepper to taste
- basil garnish
Instructions
- Cook egg to liking in a medium pan
- Spread margarine on both sides of a slice of tuscan bread and toast in pan over medium heat
- Flip bread once edges have browned and toast other side
- Remove toast from heat and place on a plate with cooked egg on top
- In the same pan, add a drizzle of olive oil add diced tomatoes
- season with salt and pepper then add balsamic vinegar and coat tomatos
- remove tomatoes from heat after tomato skins have slightly wilted
- Add sauteed tomatoes to the top of sandwich
- Add grated cheese and basil garnish
