A while ago I shared that I wanted to get fit and healthy prior to my 35th birthday this February. Well, I’m still on that venture though I got off my path a few times (more than a few times) this summer. I’m actually excited to get back on track with my fitness adventure. It’s been a gratifying experience to feel great and healthy. Plus, it’s super easy to do when you find enjoyable superfoods. Creating salad meals is a top favorite way of incorporating multiple superfoods in one meal. I ate a superfoods mix salad with grapefruit, almonds, and goji berries today that was so filling that it eliminated my afternoon snacking.
Mix Salad with Grapefruit, Almonds, and Goji Berries
My salad consisted of healthy greens (spinach, baby kale, radicchio, frisee, arugula, and romaine) that are jammed pack of nutrients and anti-inflammatory compounds; carrots for eye health; anti-oxident and metabolic boosting grapefruit; protein and fiber rich almonds; as well as immune and energy boosting goji berries.
You can get all these ingredients at a regular grocery store or natural stores like Wegmans, Whole Foods, or Trader Joes. The salad is basically a toss and enjoy salad. After you peel and chop the grapefruit, everything can be tossed into a bowl without further prep.
The great thing about using fresh grapefruit is that the juices of the fruit serve as a great dressing! If you wanted to dress this salad I’d recommend a ginger dressing. Ginger is great for it’s anti-inflammatory properties and ingestion settling. I’m one to get frequent upset stomachs, but the ginger dressings do help in curbing the frequency. Unfortunately, I’m not a big fan of ginger ale. If you spent a year drinking ginger ale for morning sickness you probably wouldn’t either. If you don’t like ginger at all, use a mix of olive oil and balsamic vinegar.
