Best Creamy Roasted Butternut Squash Soup

One of my favorite soups to make has to be my recipe for the best creamy roasted butternut squash soup. This hearty soap is perfect for winter dinners and family gatherings for sure.

The holidays are the best times for easy family meals. Soups are one of my favorite go-to’s for quick meals, but with small kids soups don’t always land. This tasty roasted butternut squash is just the right amount of heartiness and flavor. Best yet, it’s super easy to make.
Ingredients for Butternut Squash Soup
- Large butternut squash
- 36oz Vegetable stock
- 1 large scallion
- 1 yellow onion
- 2 tablespoons minced garlic
- olive oil
- salt
- pepper
- nutmeg
Best Creamy Roasted Butternut Squash Soup
- Cut a large butternut squash in half and lightly cover with olive oil, salt, and pepper.
- Place butternut squash onto parchment paper cut side down. Roast on 375F for 45 minutes until golden brown.
- Remove from oven and let cool for a few minutes. While cooling, saute chopped scallion, onions, and garlic in a pan over medium heat until softened.
- Peel the skin off the squash and add to a blender along with the scallion and garlic. Blend all ingredients with vegetable stock. Add a dash of nutmeg and season with pepper to taste.
- Serve hot in a bowl and top with pepper.
My family is such a fan of this soup and I’m sure you will be too! This recipe serves 6-8 people easily. I recently made this soup for Thanksgiving as an appetizer and it was a crowd pleaser.
