Pancake Mix Chocolate Chip Muffins
Hola! I am posting a bit late as I had an enormous stack of work to do and was unable to give my blog a moment of time until now. Damian and I attend a bible study community group and it was my turn for snacks last night. I completely forgot to make a snack and had 1hour to get something prepared. I whipped up these pancake mix chocolate chip muffins which are a hit whenever I make them. I have actually had a version of this recipe since my high school home economics class. Multiple changes have occurred over the years and I finally perfected my recipe about 3 years ago.
These muffins are moist, delicious, and full of chocolatey favor….with some cinnamon of course. I put cinnamon on practically anything sweet. It is truly the best spice on the planet. I showed up with these muffins and left with only one left. I should also note that my group only has 6 members and this recipe makes 12. I have made these muffins for breakfast before and this is Nugget’s favorite breakfast. You can also substitute the chocolate chips for fruit. This recipe works great with apples and/or bananas. I am trying to make a version that incorporates vegetables. Nugget refuses to eat his veggies. On the contrary, Chi-Chi prefers vegetables over almost anything. WHAAA…yes people. A 2 year old that eats all of her vegetables and doesn’t like chicken nuggets.
