Drop in, unexpected guests can cause anxiety if you are not prepared for those instances. When guests arrive and your home is a hot mess, the last thing on your mind is figuring out what to make for appetizers. Cue this quick and tasty dip! It takes only 10 minutes to make and is exceptional when paired with the Sutter Home’s award winning selection of California wines. We try to keep at least one red and one white wine stocked for unexpected guests. I find that a good cabernet, like Sutter Home Cabernet Sauvignon, is a great wine that goes well with many foods. I am a white wine drinker, but do enjoy the sweeter reds. My favorite wine is the Sutter Home Pinot Grigio. It’s smooth and sweet flavors can pair with light appetizers and my quick to make dip!
To be honest, I swiped this recipe from my mother. Growing up in a Latin house in America means you’ll be exposed to traditional dishes mixed in with some American influence. Every week we’d have tacos. On several occasions, my father would sometimes invite people from work over unexpectedly. If I remember correctly, one of those nights fell on taco night. Seeing that dinner was practically over, my mother had nothing really to serve. One of the things you have to do when hosting guests is to put out some aperitivos (appetizers). So, she pulled together a taco inspired dip! Who doesn’t love a cheesy taco dip?! My family has a big love of cheese. Though this dip only uses cream cheese and cheddar cheese, my mother would pile on all sorts of cheeses if she could. I’ve made this dip quite a few times as an adult. The original dish doesn’t have any toppings, but I thought the cilantro (which my mother literally uses for every dish) and black olives would be a tasty addition.
Here are some tips to keep in mind when hosting unexpected guests for a light fare.
- Stock at least one red and one white wine.
- Try serving easy to make appetizers/small dishes. These are quick to make and do not take too much time away from interacting with your guests. Check out the recipe for my tasty, quick dip below.
- Set out wine charms so guests can keep track of their glasses
- Don’t forget the tunes! Set your tv on the music channels and avoid changing out CDs. You get more time with your guests and less hassle.
Ingredients
- 4 oz cream cheese
- 8 oz chunky salsa
- 4 oz shredded cheddar cheese
- chopped cilantro
- halved seedless black olives
Instructions
- Preheat oven to 375F
- Spread a spoonful of the salsa on the bottom of a casserole dish (helps avoid cheese from sticking to dish)
- Spread cream cheese atop of the salsa
- Top with shredded cheddar cheese
- Bake for 10 minutes or until cheese has melted
- Top with cilantro and olives, then serve hot with tortilla chips
