Gone are the days when I could eat how much I truly wanted. Instead, I make an easy pasta salad with olive oil that I could eat a bit more of without the high calories of a mayo pasta salad.
There is also the added benefit that it can last longer unrefrigerated compared to mayo based pasta salads. Simple Pasta Salad With Olive Oil
Whenever I need a quick side dish for a summer gathering, my quick potato salad and this simple no mayo pasta salad are my go to recipes. Both recipes call for diced peppers so I often create both dishes to serve as sides. I’ve never heard a complaint about that either! I love the mix of red and green peppers with red onions. It’s the perfect combination for BBQs and picnic side dishes. The bite of the peppers with the the soft pasta salad is a party in your mouth.
Ingredients
- 1 diced red pepper
- 1 diced green pepper
- 1 diced red onion
- 1 box of macaroni
- 1/4 cup olive oil
- 1 tablespoon apple cider vinegar
- salt and pepper to taste
Instructions
- Cook macaroni according to box instructions.
- Add macaroni to large bowl and add peppers and onions
- Add olive oil and vinegar to bowl and toss
- Season with salt and pepper to taste
